1. Grated rind of 1 Lemon Preheat oven to 300 deg F Combine applesauce, lemon juice and rind.

3. In separate bowl, beat egg whites until peaks form.
4. Gradually add sugar while continuing to beat.
5. Add vanilla. Mix approx. 1/4 of meringue through applesauce and spoon remaining meringue on top.
