Ingredients:

8 Tablespoons Butter
1 Cup Sour Cream
8 Russet Potatoes
4 Bacon strips cooked
1 Cup Green Onion
1/2 Pound Cheddar Cheese Shredded

Directions:

1-2. Bake the potatoes at 400 degrees for 40 minutes or until tender (I sometimes "nuke 'em").

3. Cut the top quarter off of the potatoes and discard (or do what you will with them!).

4. Scrape the potato out of the skin and place in a large bowl.

5. Place the skins on a baking sheet. Sliver the bacon and add to the potato in the bowl.

6. Add the remaining ingredients into the bowl and mix to the desired texture.

7. Spoon the mixture back into the potato skins, piling high.

8. Bake at 400 degrees for another 10-15 minutes, until light brown.
