This is a lovely way to add more fruit to your diet. This recipe creates a creamy and refreshing desert or snack in just a few minutes.

Ingredients:

2 Tablespoons Sugar
1/2 Teaspoon Almond Extract
Cup Milk
1/4 Cup Dried Apricot
1 Can Apricot
1 Cup Cottage Cheese creamed

Directions:

1. Place the cottage cheese, dried apricots, sugar and almond extract into a blender.

2. Blend about 1 1/2 minutes until all is smooth.

3. Pour into chilled glasses. Garnish with canned apricots.
