1 Tablespoon Dried Thyme Leaves
2 Teaspoons Fennel Seeds
1 1/2 Tablespoons Cilantro
1 1/2 Tablespoons Cumin Seeds
1/2 Cup Mustard Seed yellow/white
3/4 Teaspoon Cardamom Seed pods discarded
2 Teaspoons Flakes Red Pepper or less to taste
