Arroz Verde (Green Rice)

Ingredients:

1 Teaspoon Salt to taste
2 Cloves Of Garlic
3 Tablespoons Vegetable Oil
1/2 Cup Water warm
2 Green Bell Peppers coarsely chopped
1/2 Cup Parsley fresh, chopped
1 Onion yellow, coarsely chopped
2 Cups Brown Rice long-grain, raw

Directions:

1. Puree the vegetables in a blender with 1/2 cup of water until smooth.

2. Saute the rice in oil for 2 or 3 minutes, stirring to prevent the rice from scorching.

3. Add the vegetable pure and cook for 5 more minutes, stirring often.

4. Add 3 cups of water and the salt and bring to a boil.

5. Reduce the heat, cover, and cook until the liquid is absorbed, 30 to 45 minutes.
