Authentic Irish Stew

Ingredients:

2 Pounds Lamb cut in 1-inch cubes
1 Pound Potato peeled and cut in cubes
1 Pound Carrot peeled and sliced
1 Pound Onion quartered and sliced
2 Bay Leaves finely chopped
1/2 Teaspoon Oregano leaves only
1/2 Teaspoon Thyme Leaves crushed
1/2 Teaspoon Rosemary dried

Directions:

1. Cover the lamb with water and boil for 15 minutes.

2. Drain and dry the meat. Combine meat and vegetables.

3. Tie the herbs in a small cloth bag, add to the mixture.

4. Add enough water to almost cover. Simmer for 1 hour and 30 minutes.

5. Remove the herb bag and serve. Serves 6 to 8.

salt & pepper, thickening & replace water with 1/2 stock & 1/2 beer. Add a splash of Worcestershire sauce for even better flavors
