Ingredients:

4 Cups Chicken Stock 4 Cups Chicken Stock or canned brot
1 Unit Fresh Lemon Juice 1 Unit Tb Fresh lemon juice
1/4 Teaspoon Lemon 1/4 Teaspoon Lemon zest finely chopped
1/2 Cup Brown Rice 1/2 Cup Brown rice cooked
4 Eggs 4 Egg yolks slightly beaten
1 Unit Pepper 1 Unit Pepper fresh ground
1 Unit Nutmeg 1 Unit Nutmeg ground

Directions:

1. Heat stock in 2 qt.

2. saucepan until steaming. Stir in lemon juice and zest.

3. Add rice (I've used white rice also) and heat.

4. Whisk 1/4 cup of stock into egg yolks, then quickly whisk mixture back into stock.

5. Heat gently, stirring occasionally, until steaming, 2-3 minutes Pour into serving bowls and sprinkle with pepper and nutmeg if desired.
