BLACKENED DRUM

Ingredients:

1 Tablespoon Paprika divided
2 Tablespoons Salt plus more for sprinkl ing
1 Teaspoon Onion Powder
1 1/2 Teaspoons Garlic Powder (opt)
1 Teaspoon Red Pepper thinly sliced
1/2 Teaspoon Pepper white
1/2 Teaspoon Pepper hot red
1/2 Teaspoon Thyme Leaves if desired
1/2 Teaspoon Oregano crushed
1 Tablespoon Parsley fresh, chopped

Directions:

1. Mix above dry ingredients in a bowl.

2. Dip the drum fillets in melted sweet cream butter and sprinkle with the seasoning mixture, then drop into a very hot cast iron skillet.

3. Cooking time is only 3 - 4 minutes per side; thinner fillets require less time.

4. (A tablespoon of butter may be added to the skillet just before the seasoned fish to prevent sticking).

5. Also for: Try fillets of flounder, speck, grouper, amberjack, dolphin.
