BLUEBERRY OAT MUFFINS

This recipe is great for those times you want home baked muffins in a hurry. The real blueberries give them that warm bakery flavor.

Ingredients:

1 Cup Quick Oats uncooked
1 Tablespoon Lemon Juice
1 Cup Milk less 1 tbsp
1 Cup Flour (to 4 1/2 cups)
1 Teaspoon Baking Powder plus
1/2 Teaspoon Baking Soda level - dissol ved in milk
1/2 Teaspoon Salt (I used reduced sodium)
3/4 Cup Brown Sugar or as much as 3 teaspoons
1 Unit Egg lightly beaten
1/4 Cup Margarine
1 Cup Blueberries or cranberries*

Directions:

1. * Frozen berries mixed in without thawing.

2. Add milk to lemon juice in 4 cup measure. Let stand, combine oats.

3. Combine flour, baking powder, baking soda, salt and brown sugar in mixing bowl, stir well.

4. Add egg and melted butter to oat mixture. Mix well.

5. Add oat mixture all at once to dry ingredients.

6. Stir just until all ingredients are moistened.

7. Gently fold in blueberries. Fill prepared muffin cups 3/4 full.

8. Bake at 400F for 20 min or until top springs back and is lightly browned.
