Ingredients:

1 Package Yeast scant tab
2 Tablespoons Water warm
4 Tablespoons Olive Oil
6 Cups Flour unsifted
1/4 Cup Water warm
6 Tablespoons Olive Oil + extra for pan
1 Teaspoon Salt (optional)

Directions:

1. Mix together first six ingredients and let rise 30 to 0 minutes.

2. Divide dough into 3 parts and place in 3 olive-oiled pie pans.

3. Dimple dough with fingers. Mix olive oil and water, brush tops with this mixture.

4. Sprinkle on top: sea salt, pepper, rosemary and thyme.

5. Let rise 50 to 60 minutes. Bake at 350 degrees F for 25 minutes.

6. May dip in olive oil. Peggy also says if the herbs are dried to soak in water 10 minutes and then pat dry with paper towels.
