Ingredients:
8 Ounces Bacon 8 Ounces Bacon diced
1 1/2 Ounces Shallots 1 1/2 Ounces Shallot minced
2 Unit Cloves Of Garlic 2 Unit Clove Of Garlic mashed
4 Ounces Brown Sugar 4 Ounces Brown sugar (optional)
3 Ounces Cider Vinegar 3 Ounces Cider vinegar plus
6 Ounces Vegetable Oil 6 Ounces Vegetable oil *
1 Teaspoon Salt 1 Teaspoon Salt to taste
1 Teaspoon Pepper 1 Teaspoon Black peppercorn cracked
2. Remove the diced bacon from the pan and reserve.
3. Add the shallots and garlic to the bacon fat and sweat.
4. Blend in the brown sugar to melt. Whisk in the cider vinegar and then oil.
5. Season to taste with salt and pepper. Bring to a simmer.
