This recipe is ridiculously easy; it will make you look like an old hand in the kitchen. If you’re camping you can use a small flat-bottomed potjie and cook it over the coals (put a few coals on the lid as well). This old-fashioned baked pudding is made with apples, butter, brown sugar, and other ingredients.

Ingredients:

2 Eggs at room temperature
2 Cups Sugar
1 1/2 Teaspoons Ground Nutmeg
2 1/4 Cups All-Purpose Flour
2 Teaspoons Ground Cinnamon
1/2 Teaspoon Salt to taste
1 Cup Brown Sugar Firmly packed
2 Teaspoons Baking Soda
1/2 Cup Shortening
4 Cups Applesauce
1 Cup Pecan or walnuts Chopped
2 Tablespoons Butter or margarine

Directions:

1. Cream shortening; gradually add 2 cups sugar, beating well at medium speed of an electric mixer.

2. Add eggs, one at a time, beating well after each addition.

3. Combine flour and next 4 ingredients in a medium bowl; stir well.

4. Add flour mixture to creamed mixture alternately wity applesauce, beginning and ending with flour mixture.

5. Mix well after each addition. (Mixture will be very wet.

6. ) Pour batter into a greased and floured 13 x 9 x 2-inch baking pan.

7. Combine 1 cup brown sugar, pecans, and butter in a small bowl; mix well with a fork.

8. Sprinkle brown sugar mixture over batter, lightly pressing into batter.

9. Bake at 350 degrees for 45 to 55 minutes, or until a wooden pick inserted in center comes out clean.

10. To serve, cut into squares; invert each square onto a dessert plate.

11. Serve warm topped with whipped cream or ice cream.
