Baked Avocado With Curried Nut Raisin Stuffin

Ingredients:

1/2 Cup Onion chopped
4 Tablespoons Vegetable Broth
4 Tablespoons Olive Oil extra virgin
2 Cups Barley cooked
1/4 Cup Raisin (up to 1)
1/4 Cup Cashew chopped
1 Tablespoon Curry Powder oriental pref
3 Tablespoons Olives black sliced
1/4 Cup Sesame Seeds toasted, opt.
6 Avocados ripe skinned, destoned
1 Cup Yeast cheesy"

Directions:

1. In a large saucepan, saute the onions in the broth or oil over medium-high heat for 5 minutes.

2. Add the remaining ingredients, except the avocados and "cheesy" sauce, and stir well until warm.

3. Put sauteed ingredients in a greased baking dish and place avocados over the mixture.

4. Top with the "cheesy" sauce. Serve with tomato salsa.
