Baked Blintz Loaf

1 Egg lightly beaten
2 Eggs at room temperature
3 Tablespoons Sugar
1 Teaspoon Salt to taste
1 Tablespoon Sour Cream
1 Pound Cottage Cheese
4 Ounces Cream Cheese softened
1 Teaspoon Baking Powder
3/4 Cup Milk
1 1/4 Cups Flour
2 Tablespoons Margarine softened
1/2 Cup Margarine melted

1. Preheat the oven to 350 degrees.

2. Grease a 9 x 5 " loaf pan. Combine all the batter ingredients in a bowl and beat well.

3. Pour half the batter into the loaf pan. Mix all filling ingredients in a separate bowl and beat well.

4. Pour filling over batter. Cover with second half of the batter.

5. Bake for one hour. Let cool for 10 minutes.

6. Serve with applesauce or sour cream. I add a little bit of cinnamon to the filling.
