My guests enjoy this very much and one stated "it's like a large baked oatmeal cookie for breakfast".

Ingredients:

2 Eggs at room temperature
1 Teaspoon Salt to taste
1/2 Cup Margarine
2 Teaspoons Baking Powder
2 Cups Milk
3/4 Cup Brown Sugar
3 Cups Oatmeal

Directions:

1. Mix all ingredients together and pour into 13x9 buttered pan.

2. Bake at 375 F for 25 minutes.

Yummy! I put it in a 9" x 9" square baking dish and added 1 tsp of Cinnamon Vanilla Simple Indulgence by Tupperware and added 12 min to the baking time. Turned out wonderful!

Quite tasty, I added raisins for a little extra sweetness, really any dried fruit would be excellent in this recipe. Also thinking about sliced almonds on top next time for added crisp!
