Baked Pears Stuffed With Almonds

Ingredients:

1/4 Cup White Wine 1/4 Cup White wine dry
1/4 Cup Water 1/4 Cup Water
1 Tablespoon Lemon Juice 1 Tablespoon Lemon juice depending on the
1/2 Cup Sugar 1/2 Cup Sugar scant
1 Unit Stick Cinnamon 1 Unit Stick Cinnamon (1/2-inch piece)
1 Teaspoon Extract Of Vanilla 1 Teaspoon Extract Of Vanilla or orange flower water; optional
1/4 Teaspoon Lemon Peel 1/4 Teaspoon Grated lemon peel
1/4 Teaspoon Cardamom 1/4 Teaspoon Ground cardamom (optional)
1/8 Teaspoon Ground Cloves 1/8 Teaspoon Ground cloves (optional)
4 Unit Pears 4 Unit Medium-ripe pears (Bartlett or Comice); peeled halved and cored
Cup Almond Cup Whole natural almonds toasted *
3 Tablespoons Sugar 3 Tablespoons Sugar scant
1/4 Teaspoon Lemon Peel 1/4 Teaspoon Finely grated lemon peel up to 1/2 tsp
1/4 Teaspoon Cardamom 1/4 Teaspoon Ground cardamom optional
1/8 Teaspoon Salt 1/8 Teaspoon Salt and pepper to taste
1/2 Unit Egg 1/2 Unit Egg white (about 1 1/2 tablespoons)

Directions:

1. BAKED PEARS: Heat oven to 375 degrees.

2. Mix in all ingredients except pears in shallow glass or ceramic baking dish large enough to fit pear halves in a single layer.

3. Place pears in dish, cut sides down; cover loosely with aluminum foil.

4. Bake 15 to 25 minutes until pears are just tender.

5. Meanwhile, prepare Almond Filling. ALMOND FILLING: In bowl of food processor fitted with steel blade, combine all ingredients.

6. Process until almonds are coarsely chopped. TO FINISH DESSERT: Invert hot baked pear halves in dish.

7. Fill cavities with Amond Filling, divided equally.

8. Continue to bake 10 minutes, then place 6 inches under broiler about 1 minute, watching closely, to lightly brown almonds.

9. Place pears in individual dishes with the syrup.

10. Accompany with a small scoop of vanilla ice cream, if desired.
