Baked Zucchini Boats

Ingredients:

4 Zucchini
2 Tablespoons Olive Oil finely
1/2 Cup Bread Crumbs toasted
2 Tablespoons Parmesan Cheese grated
1 Egg beaten
1 Clove Of Garlic chopped
1 Onion yellow, chopped
1/2 Pound Ground Beef lean
2 Cups Spaghetti Sauce canned *
2 Tablespoons Parsley fresh, chopped
1 Cup Rice long grain cooked
3 Tablespoons Dill fresh, chopped

Directions:

1. Split zucchini lengthwise, scoop out seeds.

2. Saute ground beef, onion, garlic, dill, and parsley in olive oil.

3. Remove from heat. Add cooked rice, beaten egg, 1/4 c bread crumbs and mix well.

4. Fill zucchini with mixture and place in a baking dish.

5. Cover with spaghetti sauce, sprinkle cheese and remaining bread crumbs on top.

6. Cover and bake at 350 F for approximately 45 minutes, until zucchini is tender but firm.
