Ingredients:
6 Unit Pepper 6 Unit Dried Pasilla Peppers seeded
250 Grams Dried Tomatoes 250 Grams Dried Tomatoes
4 Deciliters Water 4 Deciliters Water warmed
3 Cloves Of Garlic 3 Clove Of Garlic peeled
1 Unit Lime 1 Unit Juice from 1 Lime
5 Centiliters Soy Sauce 5 Centiliters Japanese Soy Sauce
5 Centiliters Cognac 5 Centiliters Cognac or bourbon
1. Toast the chilis and dried tomatoes lightly in a hot frying pan (don't burn).
2. Put chilis, tomatoes and water in a sauce pan and boil until soft (c:a 10 minutes).
3. Add garlic cloves and simmer 3 more minutes. Drain and reserve the liquid.
4. Put chilis and tomatoes in a food processor.
5. Add lime juice, soy sauce, honey and cognac. Use the knife on high speed to make a smooth paste.
6. Add some of the reserved liquid if needed. Boil the paste for a few minutes and fill in jars.
7. Makes a nice but rather mild chili paste. Serve with grilled or deep fried seafood.
