Ingredients:

1/2 Cup Balsamic Vinegar or red wine vinegar
2 Tablespoons Fresh Lemon Juice up to 2
2 Tablespoons Fresh Orange Juice see note
1 Teaspoon Lemon Peel
1 Teaspoon Orange
2 Unit Garlic minced
1/4 Cup Fresh Basil
1 Teaspoon Oregano
3/4 Cup Extra Virgin Olive Oil or more
8 Ounces Goat Cheese cut into 1 inch thick rounds
1/4 Cup Red Bell Pepper
1/4 Cup Yellow Bell Pepper

Directions:

1. Mix vinegar, lemon juice, orange juice, lemon peel, orange peel, garlic, basil and oregano in medium bowl.

2. Gradually whisk in oil. Season to taste with salt and pepper.

3. Pour mixture into glass baking dish. Add goat cheese; turn to coat.

4. Refrigerate at least 2 hours or up to 2 days, turning occasionally.

5. Transfer goat cheese to platter. Spoon marinade over.
