1 Cup Ripe Banana 1 Cup Mashed very ripe bananas
3 Tablespoons Brown Sugar 3 Tablespoons Brown sugar heaping
1 1/2 Teaspoons Salt 1 1/2 Teaspoons Salt and pepper to taste
4 Tablespoons Buttermilk 4 Tablespoons Powdered buttermilk
1 Cup Oats 1 Cup Quick-cooking oats
2 1/2 Cups Flour 2 1/2 Cups Unbleached white flour (see note)
1/3 Cup Oats 1/3 Cup Steel-cut oats***
2 Teaspoons Dry Yeast 2 Teaspoons Dry Yeast preferably red star
