Banana Raisin Walnut Muffins

Ingredients:
1 Cup Flour 1 Cup +2 T. flour
1 Cup Flour 1 Cup +2 T. flour
1/2 Cup Milk Powder 1/2 Cup Nonfat dry milk powder
1/4 Cup Brown Sugar 1/4 Cup Brown sugar firmly packed
2 Teaspoons Baking Powder 2 Teaspoons Baking powder plus
1/4 Teaspoon Nutmeg 1/4 Teaspoon Nutmeg ground
1/2 Teaspoon Baking Soda 1/2 Teaspoon Baking soda level - dissol ved in milk
1 Cup Buttermilk 1 Cup +2 T. buttermilk
1 Unit Egg 1 Unit Egg lightly beaten
1/4 Cup Vegetable Oil 1/4 Cup Less 2 t. vegetable oil
2. Spray 12 muffin cups with nonstick spray. In medium mixing bowl cmbine flour, milk powder, sugar, baking powder, baking soda and nutmeg; stir to combine and set aside.
3. In small bowl, combine buttermilk, egg, oil, and butter and stir until blended; stir in dry ingredients.
4. Add banana, raisins, and walnuts and stir to combine (mixture will be lumpy).
5. Fill each baking cup with an equal amount of batter and bake for 15 minutes (until golden brown and a toothpick inserted in center comes out dry).
6. Transfer muffins from pan to wire rack and cool.
