Banana Splits

1 Cup Yogurt optional
1 Teaspoon Yeast dry
1 3/4 Cups Bread Flour up to 4 1/2 cups
1/2 Cup Whole Wheat Flour preferably organic
1 Teaspoon Ground Cinnamon up to 1/2 teaspoon
1/2 Teaspoon Salt (to taste)
1/2 Cup Banana mashed ripe
3 Tablespoons Dates minced
1/4 Cup Water reserved from cooking
4 Unit Bananas mashed (about 1/2 cup per banana)
1/2 Cup Apple Juice concentrate
2 Tablespoons Unsweetened Cocoa preferably Dutch-process
1/2 Teaspoon Vanilla or orange flower water; optional

1. Add all ingredients for the bread in the order suggested by your bread machine manual and process on the basic bread cycle according to the manufacturers directions.

2. In a cheesecloth-lined strainer or in a coffee filter, drain the yogurt 1/2 hour.

3. While the bread is baking, make the sauce. Bring the apple juice concentrate to a boil.

4. Stir in the cocoa. Blend well. Remove from heat and let cool, then add the vanilla.

5. At the end of the baking cycle, remove the bread from the machine and let cool.

6. Slice 1/2 inch thick. Cut each slice in half.

7. On each desert plate, place a piece of bread drizzled with chocolate sauce and crowned with banana slices.
