Banana-nut Bread

1/2 Cup Butter (5oz)
1 Cup Sugar
2 Unit Eggs separated, plus 2 egg yolks
1/2 Teaspoon Salt (to taste)
1 Teaspoon Vanilla
1 Teaspoon Baking Soda or less to taste
2 Cups All-Purpose Flour
3 Unit Bananas Mashed
1/2 Cup Pecan chopped chopped

1. Preheat oven to 300-degrees.

2. Cream butter and sugar together in a large bowl.

3. Stir in eggs, salt and vanilla. Sift together the soda and flour and add to creamed mixture.

4. Add bananas and nuts, mixing well. Pour into a greased 9x5x3-inch loaf pan and bake at 300-degrees for one hour or until bread tests done.

5. Serve immediately or wrap and store in an airtight container while still warm.
