2 1/2 Cups All-Purpose Flour plus more
1/3 Cup Sugar or thai kitchen coconut; (palm) sugar
1/3 Cup Brown Sugar packed
1 Tablespoon Baking Powder plus
1 Teaspoon Baking Soda level - dissol ved in milk
1 Teaspoon Allspice ginge
1 Teaspoon Ground Ginger (optional)
1 Cup Banana Mashed (about 3 med)
Cup Skim Milk chilled
1/3 Cup Buttermilk room temp
1/3 Cup Ricotta Cheese part skim milk
2 Tablespoons Vegetable Oil *
1 Tablespoon Vanilla or orange flower water; optional
1 Egg white (optional)
1 Egg separated

1. Preheat oven to 400.

2. Combine first seven ingredients in a large bowl, and make a well in center of mixture.

3. Combine banana and next seven ingredients in a bowl, and add to flour mixture.

4. Stir just until moist. Spoon batter into 18 muffin cups lined with paper or foil liners.

5. Bake at 400 for 18 minutes or until done. Remove from pans immediately, and cool on a wire rack.
