Wonderful tasty recipe that I make whenever it gets warm outside.

Ingredients:

1/4 cup Pineapple Juice
2 tablespoons Fresh Lemon Juice
24 oz Salmon 6 fillets
2 tablespoons Brown Sugar
4 teaspoons Chili Powder
2 teaspoons Lemons grated rind
3/4 teaspoon Cumin Seed
1/2 teaspoon Salt
1/4 teaspoon Cinnamon

Directions:

1. Combine first 3 ingredients in a plastic bag, seal and marinate in refrigerator 1 hour, turning occasionally.

2. Preheat oven to 400 F.

3. Remove fish from bag; discard marinade.

4. Combine sugar and next 5 ingredients in a bowl. Rub over fish.

5. Place in an 11x7 baking dish coated with cooking spray.

6. Bake at 400 F for 12 minutes or until fish flakes easily when tested with a fork.

7. Serve with lemon, if desired.
