Rinse the pearl barley, put into a jug and pour in the boiling water. Add in the lemon rind and lemon juice and sugar and stir thoroughly. Leave to cold then strain
1. Rinse the pearl barley, put into a jug and pour in the boiling water.
2. Add the lemon rind and lemon juice and sugar and stir thoroughly.
3. Leave to cool then strain into a clean jug or bottle before serving.
4. This drink will keep for up to 5 days in the fridge, but do cover it as barley water easily picks up other flavors.
