Basic Uncooked Buttercreme Frosting

Ingredients:
3 Unit Eggs 3 Unit Egg yolks (up to 5)
1/4 Cup Confectionery Sugar 1/4 Cup Confectionery Sugar (optional)
1 Teaspoon Vanilla 1 Teaspoon Vanilla almond or lemon flav
4 Ounces Butter 4 Ounces Butter softened (kitchen scales are best used for accuracy)
1. Put first 3 ingredients in electric blender and blend until well mixed.
2. Add softened butter a little at a time to blend.
3. Then blend in the firm butter a little at a time until creamy and thick.
4. Variations: BEFORE ADDING BUTTER add 1 square melted and cooled unsweetened chocolate or 1 teaspoon instant coffee.
