Ingredients:

1 Tablespoon Lemon Juice
2 Tablespoons Cider Vinegar
2 Tablespoons Safflower Oil
1/4 Teaspoon Pepper ground
16 Ounces Great Northern Beans Drained And Rinsed
1 Cucumber Chopped
1 Red Bell Pepper Chopped
2 Tablespoons Fresh Basil Chopped
1 Tablespoon Fresh Parsley Minced

Directions:

1. In mixing bowl, combine beans, cucumber and red pepper.

2. In a small bowl or measuring cup, combine dressing ingredients.

3. Pour over bean mixture and toss. Using a slotted spoon, arrange on lettuce leaves on individual chilled salad plates.
