Basque Style Steamed Clams (Almejas Guisadas)

Ingredients:
4 Quarts Cherries
4 Unit Cloves Of Garlic minced (up to 4)
1 Unit Onion about 1" in diameter, minced
1 Tablespoon Parsley minced
1 Tablespoon Olive Oil or lard
1/2 Cup Dry White Wine preferably nonalcoholic white wine or vegetable stock
1. Wash clams thoroughly and place in a large kettle.
2. Add remaining ingredients. Cover and cook over medium heat for 20 minute.
3. Serve hot in individual bowls, accompanied by thick slices of french bread and a green salad.
