This beef dish will be the star of your next dinner party! It's an elegant entree guaranteed to wow your guests, and the easy preparation makes this recipe a keeper.
1. Preheat oven to 400 F Cut 1" wide by 1/2" deep gash in top of each fillet.
2. Brown fillets in oil,1 minute on each side. Sprinkle with salt, pepper and paprika.
3. Set aside. On lightly floured board, roll pastry to 1/2 original thickness.
4. Cut in half. Brush top of each square with egg.
5. Reserve remainder of egg. Mash cheese with butter, chives and garlic.
6. Press mixture into gash in each fillet. Place a fillet in center of each pastry.
7. Bring pastry up around meat and pinch together at top in an attractive manner.
8. Place on ungreased baking sheet. Brush with reserved egg.
9. Bake 20 minutes, until pastry is golden brown.
10. NOTES : I found this on the Internet and modified it a bit substituting feta for bleu cheese.
