Beef Sauce for Noodles

Ingredients:

3 Tablespoons Water hot
1 Tablespoon Cornstarch with honey
3/4 Cup Stock or canned broth
1 Tomato peeled, seeded and finely diced
1 Cup Beef or chicken broth
1/2 Teaspoon Sugar up to 2
2 Tablespoons Vegetable Oil for deep fat frying
1/2 Teaspoon Salt (if using water)
1 Onion cut into 1-inch
1 Clove Of Garlic minced 1

Directions:

1. Mince or grind beef.

2. Mince garlic and onion. Peel tomato and cut in wedges.

3. Heat oil. Add salt, then garlic and onion; stir-fry until translucent.

4. Add beef; stir-fry to brown lightly. Add stock, sugar and tomato wedges.

5. Heat quickly, stirring. Meanwhile blend cornstarch and cold water to a paste; then stir in to thicken.

6. Pour sauce over noodles. Garnish with parsley and serve.

7. VARIATION: Omit the tomato and sugar. Instead, after step 2, add to beef 1 cup fresh mushrooms, 2 celery stalks and 1 green pepper, all diced.

8. Stir-fry 1 to 2 minutes more; then add the stock and simmer, covered, 2 to 3 minutes.
