Beef Stir-Fry With Noodles

Ingredients:

1/4 Pound Noodles flavor packet discarded
3 Tablespoons Soy Sauce ;
1 Tablespoon Cornstarch about
1 Teaspoon Sugar brown
1 Pound Sirloin Steak thinly sliced across the grain
1 Teaspoon Vegetable Oil as needed
1 Teaspoon Oriental Sesame Oil
2 Teaspoons Fresh Ginger minced
1 Unit Clove Of Garlic minced
1 Cup Scallion chopped
1/4 Pound Mushroom chopped
3/4 Pound Frozen Spinach thawed and drained, or fresh, chopped

Directions:

1. Cook ramen noodles in a large pot of boiling salted water 3-4 minutes or until al dente.

2. Drain thoroughly. Set aside and keep warm. Combine next 3 ingredients in a jar with a tight fitting lid.

3. Shake vigorously. Place sliced beef in a mixing bowl.

4. Pour soy sauce mixture over beef and toss to coat.

5. Heat vegetable and sesame oil in a wok or heavy nonstick skillet over high heat.

6. Stir-fry ginger and garlic about 45 seconds. Add beef and marinade and stir-fry about 2 minutes or until beef begins to brown.

7. Add scallions and mushrooms and stir-fry about 2 minutes or until scallions are softened.

8. Add spinach and stir-fry another 45 seconds. Season with salt and pepper to taste.

9. Serve over noodles with additional soy sauce if desired.
