Beef Strips And Carrots

1 Pound Carrot 1 Pound Carrots washed and peeled
Cup Soda Water Cup Carbonated soda water
1 Cup White Wine 1 Cup White wine dry
1 Teaspoon Salt 1 Teaspoon Salt to 1 ts
1/4 Teaspoon Sugar 1/4 Teaspoon Sugar confectioner'
1 Pound Sirloin Steak 1 Pound Sirloin steak thin slice
2 Tablespoons Vegetable Oil 2 Tablespoons Vegetable oil as needed
2 Unit Onions 2 Unit Onions small, diced
1/4 Teaspoon White Pepper 1/4 Teaspoon White pepper freshly ground
1/2 Cup Heavy Cream 1/2 Cup Heavy cream
1 Tablespoon Parsley 1 Tablespoon Parsley chopped

1. Peel carrots and cut into thin slices (crosswise at a slant).

2. Place in a saucepan with the soda water, wine, 1/2 t salt and sugar.

3. Cover and simmer for 25 minutes or until tender.

4. Meanwhile cut the meat into very thin slices.

5. Heat the vegetable oil and saute the onions about 5 minutes.

6. Add the beef slices; cook for 5 minutes, stirring often.

7. Season with 1/2 t salt and 1/4 t pepper. Add the meat and onions to the carrots.

8. Mix carefully. Stir in the cream. Heat through but DO NOT boil.

9. Correct seasonings if necessary. Sprinkle with chopped parsley and serve.
