Ingredients:

1 Unit Yeast 1 Unit Package of yeast
1 Unit Yeast 1 Unit Package of yeast
1 Cup Water 1 Cup Hot water
1 Unit Sugar 1 Unit Sugar confectioner'
10 Unit Bananas 10 Unit Very soft bananas
3 Tablespoons Cinnamon 3 Tablespoons Cinnamon (or more, to taste)
2 Tablespoons Nutmeg 2 Tablespoons Nutmeg ground
2 1/2 Pounds Flour 2 1/2 Pounds Flour more as needed to 7 c
1 1/2 Pounds Sugar 1 1/2 Pounds Sugar confectioner'
1 Unit Orange 1 Unit Grated rind med. sz orange
1/4 Teaspoon Salt 1/4 Teaspoon Salt to 1 ts

Directions:

1. Add yeast to hot water ans sprinkle in a little sugar.

2. Cover and let stand to start rising process.

3. Mash bananas throughly in large mixing bowl with yeast.

4. Add cinnamon, nutmeg, flour, sugar, grated orange rind and salt.

5. Mix throughly and let stand overnoght. Mixture will rise and triple in amount.

6. Drop by spoonfuls in deep fat; fry until brown.
