Berry Breakfast Cake

This is a pretty easy recipe that anyone could make. It is perfect as a dessert or a sweet brunch item to bring to a family party.

Ingredients:

1 1/2 Cups Cornmeal
1/2 Cup Flour
1 Tablespoon Baking Powder
2 Unit Eggs ;
1 Cup Blueberries or boysenberries
1/2 Cup Syrup
1 Tablespoon Vegetable Oil
1 1/2 Cups Milk or soymilk

Directions:

1. Combine first three ingredients.

2. Beat egg whites until fluffy. Beat liquids, and gently fold in egg whites.

3. Stir in dry ingredients, pour batter into an oiled cake pan, sprinkle with berries, and place on a baking sheet.

4. Bake at 425 F for 30-35 minutes until golden.

5. Serve hot with butter or your favorite syrup.
