Ingredients:

1 Teaspoon Baking Soda
1/2 Teaspoon Vanilla or grated peel of One Orange
1 1/2 Cups Flour plus extra flour for dredging
1/2 Teaspoon Salt pepper to taste,
1 Cup Sugar (or less, to taste)
1/2 Cup Butter margarine, or olive
2 Eggs beaten
4 Bananas finely crushed

Directions:

1. Cream together butter and sugar.

2. Add eggs and crushed bananas. Combine well. Sift together flour, soda and salt.

3. Add to creamed mixture. Add vanilla. Pour into greased and floured loaf pan.

4. Bake at 350 F, 60 minutes. Keeps well, refrigerated.

5. Yield 1 Loaf. My notes: I made muffins, so changed title to include that.

6. VERY moist and flavorful. Sticky. Big hit. We added pecans.

7. In other baking, I've added walnuts. Both are fantastic.

Really good!! Moist, just perfect. I was hesitant on the Salt pepper thing? so I put just 1/4 tsp pepper and a dash of salt. Still just yummy with butter on it. It would be great with walnuts too.
