1/4 Teaspoon Baking Powder 1/4 Teaspoon Baking powder plus
5 Tablespoons Butter 5 Tablespoons Butter (1/4 stick) cut into 6 pieces
1 1/4 Cups Sugar 1 1/4 Cups Sugar brown
1 Unit Egg 1 Unit Egg Lg
2 Unit Eggs 2 Unit Egg whites ;
1 Teaspoon Extract Of Vanilla 1 Teaspoon Extract Of Vanilla or orange flower water; optional
1 Teaspoon Espresso 1 Teaspoon Espresso in 1 teaspoon of water

1. Preheat the oven to 350 degrees.

2. Spray 8-inch square pan w/ vegetable oil. Stir together the first 4 ingrdients and set them aside.

3. Melt butter in saucepan. Stir in the sugar, add the egg, egg whites, vanilla and espresso.

4. Beat w/ wooden spoon until well combined. Scrape mixture into prepared pan.
