Better-than-bottled Pizza Sauce

Ingredients:

1 Tablespoon Olive Oil or lard
1/2 Cup Onion Finely chopped
1 1/2 Teaspoons Garlic
1 Can Tomato (28 oz)
1/2 Teaspoon Salt (to taste)
1/2 Teaspoon Pepper hot red
1/2 Teaspoon Sugar (up to 6)

Directions:

1. Heat oil in a medium sauce pan.

2. Add onion and cook over medium-low heat 5 minutes, stirring occasionally until soft.

3. Add garlic and cook 1 minute until fragrant.

4. Stir in remaining ingredients. Bring to a boil, reduce heat and simmer partially covered, 5 minutes or until slightly thickened.

5. Makes 3 cups NOTES : Stir in the following into your sauce for more pizzazz: * Ground chili powder, cumin and chopped Jalapeno peppers.

6. * Dried basil, oregano, and chopped fresh parsley.

7. * Refrigerated pesto. * Diced oil-marinated sun-dried tomatoes and dried thyme.
