Big Jim's Grilled Chicken Thighs With Garlic And Herbs

Ingredients:

8 Unit Chicken Thighs (bones in)
1 Unit Pepper to taste
6 Tablespoons Olive Oil up to 5
2 Tablespoons Balsamic Vinegar or red wine vinegar
1 Teaspoon Garlic
1 Tablespoon Capers mashed
2 Tablespoons Rosemary basil, oregano, or thyme alone
1 Unit Lemon

Directions:

1. Sprinkle the chicken thighs with salt and pepper and grill skin side down, over medium-low fire for 8 to 10 minutes.

2. Flip the thighs and grill for additional 4 to 6 minutes.

3. To make sure they are done, make an incision close to the bone and check that there is no redness.

4. Meanwhile, combine the vinaigrette ingredients in a bowl and mix well.

5. Remove the thighs from the grill and ladle the vinaigrette over them.

6. Serve with lemon quarters for garnish. Serves 4 as an entree.

Broil chicken, and cover in marinade, let sit overnight, then reheat next day...yum!
