Black Bean Rice

My wife makes this recipe all the time, it is one of my favorites and hopefully it will be yours as well.

Ingredients:

1 Coconut Ginger Rice
1/2 cup Raisin
2 tablespoons Vegetable Oil
1 Carrot grated (or thin sliced)
1 Red Bell Pepper sliced
1 tablespoon Fresh Ginger chopped
1/2 lb Snow Peas trimmed
15 oz Black Beans can, rinsed and drained
1 teaspoon Sugar
1/2 teaspoon Salt
2 tablespoons Fresh Lime Juice
2 tablespoons Cilantro chopped

Directions:

1. Prepare rice according to package directions.

2. (Box makes about 3 cups rice ifyou have to substitute).

3. When done stir in raisins. Set aside, keeping warm.

4. In wok, heat oil. Add carrot, onion and red pepper.

5. Stir fry until slightly soft, about 2 minutes.

6. Stir in ginger and snow peas. Stir fry until peas turn bright green, about 30 seconds.

7. Add black beans, stirring well. Add rice to pan and mix thoroughly.

8. Add sugar, salt, lime juice and cilantro. Mix well.
