Bleu Cheese and Bacon Potato Salad

Ingredients:

1/3 Cup Dry White Wine
1/3 Cup Chicken Broth
3/4 Cup Vinaigrette Dressing
1/4 Pound Bacon fried and crumbled
1/3 Cup Scallion sliced
1/3 Cup Parsley minced
3 Pounds New Potatoes peeled
8 Ounces Blue Cheese

Directions:

1. Steam new potatoes.

2. Let potatoes cool slightly and quarter them.

3. In a large bowl, combine warm potatoes with wine, chicken broth, parsley and scallions, tossing mixture gently.

4. Let cool.

5. Crumble Blue cheese, add vinaigrette dressing and toss mixture gently.

6. Chill overnight.

7. Transfer salad to a salad bowl.

8. Sprinkle with crumbled bacon and serve at room temperature.
