Blueberry Buttermilk Soup

Ingredients:

2 Cups Blueberries washed
1 1/2 Cups Water reserved from cooking
1/2 Cup Sugar brown
1/2 Teaspoon Orange
2 Tablespoons Orange Juice chicken stock or low-sodium chicken stock
2 Cups Buttermilk room temp
1 Unit Orange (for garnish)

Directions:

1. Set aside a few blueberries for garnish.

2. Combine remaining berries, water, sugar, orange rind and orange juice in a saucepan.

3. Bring to a boil. Cover and reduce heat. Simmer 20 minutes.

4. Cool. Press blueberries through a sieve or puree till smooth in a blender.

5. Stir in buttermilk. Chill until icy cold. Over each serving float orange slice topped with a few blueberries.
