Blueberry Sauce (Spicer)

Ingredients:

2 Cups Blueberries fresh or frozen
1 Tablespoon Orange Juice
1/2 Cup Sugar

Directions:

1. In a saucepan, combine blueberries and orange juice concentrate.

2. Bring to a boil, reduce heat slightly and cook, stirring, for 20 minutes or until juice has nearly evaporated.

3. Stir in sweetener. Cook 5 minutes longer. Spoon into sterilized container and seal with sterilized lid.

4. Store in cool, dry, dark place. Or cover and store in refrigerator up to 4 weeks.

5. Makes 1 cup 1 tb as spread, 1 extra, 2 g carbohydrate, 13 calories 1/4 cup as sauce, 1 fruit choice, 10 g carbohydrate, 1 g protein.

6. Variation: Substitute raspberries, gooseberries or blackberries.
