Blueberry Scones--Low Fat

Ingredients:

1/4 Cup Sugar plus extra for coating
1/4 Teaspoon Baking Soda sieved
Cup Buttermilk (or 1 1/2 cups whole
2 Teaspoons Baking Powder soda
1/2 Teaspoon Salt pepper to taste,
1 Cup Fresh Blueberries rinsed and dried
2 Cups Flour seasoned with
1/3 Cup Cottage Cheese lowfat

Directions:

1. Mix first 4 ingredients in a large bowl.

2. Cut in the cottage cheese until mixture resembles coarse crumbs.

3. Add milk to dry ingredients with blueberries.

4. Stir until just combined. Place on cookie sheet sprayed with nonstick spray.

5. Pat into a circle 1 inch thick. Cut into 8 wedges.

6. Bake at 450 for 8 minutes. Turn off oven and bake for 7 minutes more.
