Blushing Peaches

Ingredients:

1 Cup Water
2 Tablespoons Lemon Juice fresh
1 1/2 Teaspoons Lemons peel grated
4 Peaches
3 Tablespoons Currant Jelly
1/2 Cup Sugar

Directions:

1. Combine all ingredients except peaches in fry pan.

2. Cover and simmer 5 minutes until jelly is dissolved.

3. Peel and cut peaches in halves. Place cut side down in syrup in fry pan.

4. Cover and simmer 10 minutes, turn cut side up, and cook for additional 5 minutes.

5. Remove peaches from syrup to a dish. Cook syrup, stirring constantly until it begins to jell ( 2 drops run together in a sheet when mixture is dropped form the edge of a spoon).
