Bonne Femme Sauce

This is a rich cream and egg sauce for serving with eggs and vegetables. It makes a good replacement for hollandaise sauce.

Ingredients:

2 Tablespoons Butter (opt.)
2 Eggs Yolks
1/2 Cup Heavy Cream Scalded (Heated just until
2 Cups Fish Stock Heated To Boiling (See Stocks)

Directions:

1. Salt And Freshly Ground White Pepper, To Taste Beat the egg yolks in a large mixing bowl until light, then whisk in the scalded cream.

2. Next, pour the boiling stock into the egg mixture and beat in the butter.

3. Season with salt and pepper and serve immediately.

4. Make it with chicken stock and serve it over poached eggs instead of Hollandaise, or pour it over steamed vegetables.

I suppose you can call it what you like, but given Bonne Femme is a classical French style that includes mushrooms, this is rather closer to a Bercy sauce - even then it is missing some of the more classical ingredients / method.
