Boston Brown Bread (Microwave)

Ingredients:

1 Cup Raisin dark, seedless (optional)
1 1/4 Cups Rye Flour
1 Teaspoon Baking Soda
2 1/2 Cups Buttermilk
1 1/4 Cups Whole Wheat Flour
1 Cup Dark Molasses
1/2 Teaspoon Salt coarse
1 1/4 Cups Cornmeal

Directions:

1. Sift together the dry ingredients in a large mixing bowl.

2. Add the buttermilk, molasses and raisins.

3. Mix by hand until well blended. Divide the mixture into 2 parts.

4. Place each in a waxed paper lined baking dish that are 10 x 6 x 1-3/4. Cover each with a plastic wrap.

5. Microwave one loaf at a time on medium (50%) for 22 - 24 minutes.

6. Turn dish a half turn halfway through cooking. Remove plastic wrap.

7. Place on a solid surface for about 10 minutes before removing from baking dish.
