Boston Lettuce With Radishes And Lemon Dressing

Ingredients:

10 Unit Radishes finely chopped
2 Unit Boston Lettuce
3 Tablespoons Fresh Lemon Juice up to 2
1 Tablespoon Shallot
2 Teaspoons Sugar (up to 6)
1 Unit Ground Pepper to taste
1/2 Cup Olive Oil or chili oil

Directions:

1. Cut radishes into very thin slices (preferably using a manual slicer).

2. Tear large lettuce leaves into bite-size pieces, leaving smaller leaves whole, and in a large bowl toss all lettuce with radishes.

3. In a small bowl whisk together lemon juice, shallot, sugar, pepper, and salt to taste and add oil in a stream, whisking until emulsified.

4. Drizzle dressing over salad and toss until combined well.

5. Serves 10 to 12 as part of a Swedish Midsummer buffet.
