Directions:
1. With a cleaver, chop chicken, bones and all, in 2-inch sections.2. Remove mushroom stems, leaving caps intact. Crush garlic.3. Heat oil in a heavy pan. Brown garlic lightly and discard.4. Add chicken sections and brown quickly. Reduce heat to medium.5. Add mushroom caps and stir in gently to coat with oil.6. Cook, covered, 5 minutes. Stir in sherry, then soy sauce.7. Cook, covered, over low heat until chicken is done (25 to 30 minutes).
