Bran Banana Bars

This delicious, healthy snack will be a family favorite. The fresh banana with the nuts, spices, and crunchy cereal give the bars just the right taste and texture.

Ingredients:

1 Cup All-Purpose Flour
1 Cup Cereal crushed
1/4 Cup Brown Sugar
1 1/2 Teaspoons Cinnamon (or more, to taste)
1 Teaspoon Baking Powder plus
1/2 Teaspoon Baking Soda level - dissol ved in milk
1/4 Teaspoon Salt (to taste)
1 Cup Skim Milk chilled
2 Unit Eggs separated, plus 2 egg yolks
1 Unit Carrot shredded (optional)
1 Ripe Banana mashed
1/3 Cup Walnut

Directions:

1. Lightly grease an 8 inch square baking pan.

2. In a medium bowl, combine, flour,cereal, cinnamon, baking powder, baking soda and salt; mix well.

3. In a small bowl, combine milk, eggs, carrot, banana and nuts.

4. Add to dry ingredients, mixing well. Spoon batter into pan.

5. Bake at 375 F for 25 to 35 minutes or until browned.

6. Cool in pan on a wire rack. Cut into 12 bars.
